So I tried making a kottu roshi and it turned out to be very tasty. This recipe was requested by a friend. 🙂
What you need:
1 medium sized onion (Thinly sliced)
3 to 4 cloves of garlic (finely chopped)
1 small Bonnet/green chilli
1/2 tsp of chilli flakes
1/2 a medium carrot (thinly sliced into strips)
1/4 of a cabbage (thinly sliced)
3 to 4 roshi (chappati/parata)
Any leftover chicken curry or chicken dish
2 eggs
1 tsp soya sauce
2 tbs of tomato paste
1 tbs of chilli sauce
1 tsp of chilli powder
1/2 tsp of turmeric powder
salt and pepper to taste
10 to 12 curry leaves
1 to 2 tbsp of oil
HOW TO PREPARE:
Heat up your oil at medium-low heat.
Add your onion, garlic, chilli and curry leaves and stir till the onion starts to brown up.
Next add your carrot and cabbage and mix everything in.
Add your salt, pepper, chilli powder and turmeric powder at this stage. Mix everything in and cook for about 3 mins.
Then stir everything to a side of the pan and scramble 2 eggs in the pan and mix everything in.
Add your chicken curry or chicken dish you are using at this stage and mix it in.
Now add the tomato paste, soya sauce and chilli sauce and mix it well.
Add your roshi now and and mix everything well before serving.
You should serve this immediately before it dries out. Note that I did not use any chicken masala powder or such thing. This was a quick dish made up with mostly leftover ingredients. Kottu roshi is always better when made for individual servings rather than huge servings. ENJOY!
