Hey y’all! Here is a Healthy Chicken Rice you can easily prepare with just a few ingredients.
WHAT YOU NEED:
2 cups of white rice
1 cup of Chicken breast (chopped)
1 small onion (chopped)
3 garlic cloves (finely chopped)
1/2 cup of bell peppers (I used a mix of all three colors)
1/2 of a medium carrot (diced)
!0 to 12 curry leaves
Salt and pepper to taste
1 1/2 tbs of oil (I used sunflower oil)
1 to 2 eggs (scrambled)
keep a cup of water easily accessible
How to prepare:
Marinate the chicken with salt and pepper for about 15 to 20 mins.
Take a pot and add your oil to it and when it heats up add the garlic and stir for 30 seconds and then add the onion and curry leaves.
Next add your carrots and about 1 to 2 tbs of water, close the lid and cook for 3 to 5 mins till the carrots are cooked.
Now add your bell peppers. Add salt and pepper to taste and again add 2 to 3 tbs of water (we are adding this water because we do not want to dry out the dish, and since we do not use much oil)
Next add the marinated chicken and stir for about 3 to 5 mins.
Add the rice and the scrambled eggs. Mix it well and your rice is ready!
