Corn flour Kiruboakiba
This has been one of my favourite desserts since childhood. This is not your traditional kiruboakiba but tastes amazing and simple to make. Try this and let me know how it goes!

  1. Add 4 cups water, pandan leaves, cardamom and cinnamon stick into a pot and bring it to a boil. Boil till the water reduces half amount. This takes around 15 to 20 minutes on high flame.
  2. Turn off the stove. I removed the pandan leaves, cardamom and cinnamon stick at this point. Add the sugar, stir a bit before adding the coconut milk.
  3. Mix well, and add the corn flour, keep whisking so that no lumps are created.
  4. Once the corn flour is well mixed, turn on the stove and continue cooking at medium to low flame until the mixture thickens. Remember to keep mixing. This takes around 10 minutes.
  5. Pour it into your tray and leave it to be set and slice once sets.
